Experience and innovation
Our warehouses have been designed and built specifically to store grana-type cheese, including Parmigiano Reggiano DOP and Grana Padano DOP. To guarantee the highest quality standards, it is necessary to take particular care of every single stage of the ripening process. For this reason, both our plants are managed by highly qualified and experienced personnel.
Cheese wheels in stock are divided according to their type, month, and year of production. Subsequently, they are placed on special racks and left to ripen meeting our customers’ needs. Warehouses’ temperature is kept constant in a range between 12 and 18 degrees Celsius, while humidity is always between 75% and 85%. This is possible through ongoing monitoring of stock buildings even remotely, using technologically advanced machinery. Indeed, we employ remote cameras to check both plants at all times. At night, we rely on the physical presence of security guards.
Ripening of Parmigiano Reggiano
The minimum maturation time required for Parmigiano Reggiano is 12 months. At the end of this period, Consortium experts carry out a test called “quality inspection” in order to verify products’ compliance with quality standards for their marking.
Cheese wheels meeting the established requirements obtain the DOP certification and continue their ripening process for some time, depending on customers’ instructions. The main reference periods are the following: over 12 months, over 24 months, and over 30 months.
Ripening of Grana Padano
Maturation of Grana Padano can vary from 9 to over 20 months. Also in this case, after the first 9 months, wheels are examined by Consortium skilled professionals who carry out a specific quality inspection.
Cheese wheels meeting the requirements set out by product specification obtain the DOP certification. Afterwards, they continue their ripening process on the racks according to customers’ needs.
